  2. Very nicely done, Linda. Albert Adria would be so proud… as also, Michael Meyers, Jason, and Freddy would be. That’s visually very cool. I wish we had that as a course on the Paradigm Halloween dinner. They would have loved it.

    no, I’m still waiting for Natura, though I did get a preview in a slideshow at Ferran Adria’s lecture at NYPL. I first saw this technique on Madrid Fusion 08 dvd that Chad so generously shared with me. I was stunned by the brilliantly simple technique of piping chocolate in 3D in ice water. I think it has enormous potential for chocolate sculpting.
