Pickled Leek Flower
1 large flowering leek head 1 1/2 cup rice wine vinegar 1/2 cup water 2 T. kosher salt 1 tsp. sugar Place leek head upside down in a 1 pint sterilized canning jar. Bring remaining ingredients to a boil. Cool completely and pour into jar. Seal and refrigerate for at least 1 week before using.
